Method

  • 100g sweet potato, peeled and grated
  • 400g tin of chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 25g oats
  • 25g coriander, stalks and leaves, chopped
  • 3 grated garlic cloves
  • 2 tsp cumin
  • 1 tsp ground coriander
  • Salt and pepper
  • Pitta bread and salad to serve
  • Put all of the ingredients, apart from the bread and salad, into a food processor. Blend until you have a thick and chunky paste, and then roll into 4 balls which can be flattened into patties.
  • Heat a little oil in a pan, and gently fry your patties for 4-5 minutes on each side, until nicely browned and heated right through. Serve in warm pitta breads with salad and a little extra tahini.
