White Fish with Coconut and Lime

Ingredients

Method

  • 2 limes
  • 100g creamed coconut block, chopped
  • 1 green chilli, chopped
  • Handful of coriander leaves, chopped
  • Thumb-sized piece of ginger, chopped
  • 2 chopped garlic cloves
  • ½ tsp Thai fish sauce
  • 4 pieces of firm white fish, skin on (eg cod)
  • Steamed rice and broccoli, to serve
  • Preheat the oven to 200C. Zest and juice the limes, and pop in a food processor with all the remaining ingredients apart from the fish. Blitz to a smooth paste, adding more fish sauce if necessary.
  • Place the fish on a baking tray, and spread liberally with the coconut mixture. Bake for 15-20 mins, or until the fish is cooked through and flaky, then serve immediately with steamed sticky rice and broccoli.
