  • 1 tbsp olive oil
  • 320g stir fry vegetables mix
  • 250g dried soba noodles
  • 2 red chillies, deseeded and finely sliced into strips
  • 4 garlic cloves, crushed
  • 8cm piece of ginger, grated
  • 2 eggs, lightly beaten
  • 150g cooked prawns
  • 3 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 100g sliced spring onions
  • 2 tbsp sesame seeds
  • Heat a wok and stir-fry the vegetable mix for 5 mins in the oil, or until golden. Meanwhile, cook the noodles according to package instructions. Drain well. Stir most of the chilli, the garlic and ginger into the vegetables and fry for 2 mins. Meanwhile, fry the egg in a separate pan, allow to slightly set, then add the prawns and stir-fry together for 2 mins.
  • Add the omelette, prawns, noodles, soy sauce and sesame oil to the vegetable mix. Toss together, then add the sesame seeds and spring onions, and toss again. Divide between bowls and scatter with more chilli and soy sauce to serve.
