Zucchini and Sausage Pilaf

Ingredients

Method

  • 100g basmati rice
  • 1 tsp veg oil
  • 3 sausages, meat removed from the skins
  • 1 tsp fennel seeds
  • 1 zucchini, halved and sliced
  • 100g peas
  • 200ml veg stock
  • ½ bunch of mint, chopped
  • ½ bunch of dill, chopped
  • Heat the oil in a lidded saucepan, and fry the sausage meat for 3 mins or until golden. Stir in the zucchini and seeds, and fry for 2 mins more. Add the rice, peas, stock, and half the chopped herbs, and bring to a steady simmer. Reduce the heat to low, pop the lid on, and cook for 12 mins.
  • Fold the remaining herbs into the pilaf, and serve with a good grind of black pepper.
