Ingredients
Method
- 8 rashers of streaky bacon, halved horizontally
- 2 tbsp green pesto
- 16 large basil leaves
- 225g halloumi, cut into 16 chunks
- 1 tbsp olive oil
- Preheat the oven to 220C and line a baking tray with paper. Spread each piece of bacon with a little pesto and top the end of each bacon piece with 1 piece of halloumi and 1 basil leaf.
- Roll up the bacon to enclose the halloumi and secure with a cocktail stick. Place on the tray, drizzle with oil and bake for 10 mins. Remove from the oven, baste with the pan juices, and bake for 10 mins more. Serve hot as part of a canape selection.
