Bacon, Mushroom, and Goats’ Cheese Salad



  • 1 big mushroom, sliced
  • 1⁄2 red onion, sliced
  • 1 rasher of bacon, fried and sliced
  • 1 orange, grated zest only
  • 85g goats’ cheese, crumbled
  • 2 handfuls of flat leaf parsley, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 3 cloves of garlic, sliced and lightly fried in the bacon fat
  • 1 slice of ciabatta, lightly toasted
  • Simply mix all of the ingredients (apart from the bread) together in a bowl until really well combined, then pile them up on top of your toasted ciabatta. Simple, yet utterly perfect!
