Beef Kofta with Spicy Tomato Sauce

  • 750g steak mince
  • 2 tbsp Moroccan spice paste
  • 2 tbsp couscous
  • 1 grated onion
  • 2 grated garlic cloves
  • Handful of mint and coriander, chopped
  • Pitta, to serve
  • 8 skewers
  • For the Sauces
  • 2 tbsp olive oil
  • 2 chopped garlic cloves
  • Pinch of chilli flakes and cinnamon
  • Pinch of sugar
  • 1 tbsp tomato puree
  • 2 x 400g tins of chopped tomatoes with herbs
  • Mix the beef, spice paste, couscous, garlic, onion and herbs in a bowl. Season well and form into 32 meatballs. Thread 4 balls onto each of your skewers, then leave to chill in the fridge.
  • Meanwhile, make the sauce by cooking the garlic in the oil for 30 seconds. Add all the remaining ingredients and cook for 10 mins, seasoning to taste. Heat a griddle pan and cook the skewers for 5 mins on each side. Scatter the kofta with extra herbs and serve with more herbs and grilled pitta.
