Black Pudding Rosti



  • 800g Maris Piper potatoes
  • 50g butter
  • 1 sliced onion
  • 2 crushed garlic cloves
  • 200g black pudding, cut into 1cm pieces
  • 100g cheddar, grated
  • 2 tbsp oil
  • Preheat the oven to 180C. Grate the potatoes into a tea towel and squeeze to remove the excess moisture, then tip into a bowl. Melt the butter in a frying pan, and cook the onion, garlic and black pudding for 8 mins. Combine with the potato and cheese, season well, and bring together with your hands to make 4 patties. Chill for 30 mins.
  • Heat some oil in a pan and fry the patties for about 3 mins on each side. Transfer to the oven and cook for 15 mins or until crisp, then serve as part of a tapas platter or with eggs for brunch.
