- 4 salmon fillets, skin removed
- 100g panko breadcrumbs mixed with plenty of salt and pepper
- 1 lemon, zest only
- 1 egg
- Oil
- Garlic mayo, to serve
- Preheat the oven to 200C. Tip the breadcrumbs onto a plate and mix with the lemon zest. Crack the egg into a separate bowl and beat lightly. Dip the salmon fillets into the egg and then coat in the breadcrumbs. Transfer to an oiled baking tray and bake for 20 mins. When crispy, remove and serve with salad and garlic mayo.
