Brie and Grape Pastries

  • 320g ready-rolled puff pastry
  • 1 tbsp olive oil
  • 2 sliced red onions
  • 2 red chicory heads, leaves sliced lengthways
  • 1 rosemary sprig, leaves chopped
  • 1 tbsp balsamic vinegar
  • 200g sliced brie
  • 100g sliced green grapes
  • Preheat the oven to 200C and cut the pastry sheet into 4 rectangles, then lay them on a lined baking sheet. Score the edges with a 1cm border, then prick the centres with a fork. Bake for 20 mins or until golden.
  • Fry the onions in the oil with some seasoning, then add the rosemary and sliced chicory and cook for 4 mins more or until everything is softened. Reduce the heat, stir in the vinegar, then divide the mixture between the pastries. Top with the brie and grapes, then warm in the oven for 4 mins to melt the cheese a little. Serve with salad and enjoy.
