  • 1 tsp each smoked paprika and ground cumin
  • 1 tsp dried oregano
  • 1 tbsp fresh thyme leaves
  • 900g chicken thighs, skin and bones removed
  • 2 chopped red capsicums
  • 3 sliced red onions
  • 2 chopped celery stalks
  • Sweet potato wedges, to serve
  • Preheat the oven to 200C. Mix the paprika, cumin, thyme and oregano in a bowl with some seasoning, then rub the mixture all over the chicken thighs.
  • Tip the onions, celery and capsicum into a roasting tin and toss with 1 tbsp of oil and some seasoning. Spread out into an even layer and nestle the chicken thigh fillets into the mixture. Cover with foil and roast for 40 mins, or until the chicken is cooked through. Remove the chicken from the pan and set aside, then cook the vegetables for 10 mins more, uncovered. When done, serve with the chicken and some crispy sweet potato wedges - yum!
