Cauliflower and Halloumi Pilaf

  • 500g cauliflower, broken into florets
  • 150g spinach leaves
  • 1 tbsp olive oil
  • 1 sliced red onion
  • 120g cubed halloumi
  • 1 crushed garlic clove
  • Thumb-sized piece of ginger, grated
  • 1 tsp turmeric
  • 1 tbsp curry powder
  • 500g brown basmati rice, cooked
  • 1 sliced red chilli
  • Cook the cauliflower in boiling salted water for 5 mins, adding the spinach leaves to the pan for the final 2 mins. Drain well and set aside.
  • Heat the oil in a frying pan and fry the onion for 5 mins. Add the halloumi, cook for 5 mins more, then tip in the garlic, turmeric, curry powder and ginger. Cook for 1 minute, then stir through the cooked rice, cauliflower and spinach. Season well, scatter with chilli, and serve.
