Method

  • 1 cauliflower, cut into small florets
  • 2 tbsp oil
  • 3 tbsp flour
  • 500ml milk
  • 150g grated mature cheddar
  • 300g penne pasta
  • Preheat the oven to 200C. Add the cauliflower to a baking tray and drizzle with 2 tbsp of oil and some seasoning, then toss well to coat and roast for 30 mins or until tender and golden. Meanwhile, whisk the flour with a splash of milk in a bowl until smooth, transfer to a pan and gradually add the remaining milk as it heats, stirring until the sauce thickens. Stir in the cheese and stir until melted, then season.
  • Cook the pasta in boiling salted water until al dente. Drain well, reserving 50ml of the cooking water. Tip the pasta back into the pan, pour in the cheese sauce and roasted cauliflower, and mix well to coat. Add some cooking water if it needs loosening, then serve in bowls with some chopped herbs or breadcrumbs over the top, if you fancy.
