Chargrilled Broccoli and Walnut Pasta

  • 1 broccoli, cut into small florets, stalk chopped
  • 3 tsp olive oil
  • 150g wholewheat fusilli
  • 2 crushed garlic cloves
  • 1 tbsp chopped walnuts
  • Pinch of chilli flakes
  • ½ lemon, zest and juice
  • Pop the broccoli on a baking sheet and drizzle with 1 tsp of oil and some seasoning. Grill for 10 mins, tossing occasionally, until charred and crisp. Meanwhile, cook the fusilli in boiling salted water until al dente, then drain and reserve a cup of the cooking water.
  • Heat the remaining oil in a frying pan and fry the walnuts, garlic and chilli for 3 mins. Tip the drained pasta into the pan with the nuts, then stir through the broccoli, lemon zest and juice, and loosen with a splash of the cooking water. Toss everything together to coat the pasta, then serve with a scattering of extra lemon zest and plenty of black pepper.
