Cheese and Bacon Swiss Bake

  • 1kg potatoes, cut into bite-sized chunks
  • Knob of butter
  • 1 chopped onion
  • 200g smoky bacon, chopped
  • 125ml white wine
  • 150ml double cream
  • 350g raclette, grated
  • ½ tsp smoked paprika
  • Preheat the oven to 200C. Boil the potatoes for 5 mins, then drain and tip into a large bowl. Melt the butter in a saucepan and fry the onion to soften. Add the bacon, cook for 5 mins, then mix the bacon and onion in with the potatoes.
  • Stir in the cream, wine, a pinch of paprika and most of the cheese. Season well and mix to combine, then tip into a large buttered baking dish. Sprinkle with the rest of the cheese, cover with foil and bake for 25 mins. Remove the foil, sprinkle over another pinch of paprika, and cook for 20 mins more, or until the cheese is golden and bubbling. Serve.
