Ingredients
Method
- 500g pork mince
- 1 bunch of spring onions, sliced
- 1 tbsp Thai green curry paste
- 1 tsp ginger paste
- 1 red capsicum, finely diced
- Wilted spinach, to serve
- Preheat the oven to 220C. Mix the pork mince, spring onions, capsicum, curry paste, ginger and some seasoning until well combined.
- Press the mixture into a small loaf tin, then bake for 45 mins or until cooked through. Drain away any excess juices, then remove the loaf from the tin and cut into 8 slices. Serve a pair of slices on each plate with some wilted spinach and your choice of Thai dipping sauces - simple!
