Garlic Scallops Starter



  • 12 fresh scallops, corals removed
  • 3 tbsp olive oil
  • 1 crushed garlic clove
  • 1 tsp finely chopped parsley
  • Squeeze of lemon
  • Carefully wash your scallops and pat them dry with a paper towel. Place into a mixing bowl, and mix with the garlic, parsley, and olive oil. Chill in the fridge for half an hour.
  • Heat a large frying pan until it’s smoking hot, and just before you start cooking, turn the heat right down. Add the scallops, and cook for 90 seconds on both sides, then serve immediately with a squeeze of lemon and some salad leaves. Perfection!
