Gnocchi and Peas and Ham

Ingredients

Method

  • 2 x packs of pre-made gnocchi (or enough for 4 servings)
  • 100g peas
  • 50ml mint vinegar or mint sauce
  • 1 tsp Dijon mustard
  • 50ml oil
  • 125g burrata or similar
  • 50g prosciutto, cut into thin slices
  • 1 mint sprig, to garnish
  • Cook the gnocchi to packet instructions. Meanwhile, blanch the peas in a saucepan of boiling water and place in a bowl. Add the vinegar, mustard, and oil to the bowl and gently mix. Cut the burrata in half, scrape out the soft middle, and stir into the peas. Tear the remaining burrata into pieces.
  • Place the cooked gnocchi and burrata pieces onto plates, and scatter over the peas, top with the ham, and garnish with a mint sprig. Serve immediately.
