Half Leg of Lamb with Onions and Red Wine

  • 1.25kg half leg of lamb
  • 4 large onions
  • Small bunch of thyme
  • 300ml full-bodied red wine
  • Large handful of parsley
  • Mashed potatoes, to serve
  • Preheat the oven to 160C. Season the lamb all over, then sear for 8 mins in the oil in a large lidded casserole dish, turning until browned all over. Remove to a plate and set aside.
  • Thinly slice the onions and add to the casserole to fry for 10 mins. Add a couple of thyme sprigs and some seasoning, then cook for a minute more. Sit the lamb on top of the onions, pour in the wine and bake - covered with the lid - in the oven for 3 hours. When ready, chop the parsley with the remaining thyme leaves and scatter all over the lamb, then carve and serve with mashed potatoes and the sauce from the pan.
