Indonesian Mackerel Rice

Ingredients

Method

  • 1 tbsp oil
  • 2 beaten eggs
  • 1 tbsp red curry paste
  • Pinch of sugar
  • 800g cooked long grain rice
  • 5 sliced spring onions
  • 150g peas
  • 2 tbsp soy sauce
  • 4 flaked smoked mackerel fillets
  • ½ sliced cucumber
  • Heat the oil in a wok and fry the beaten eggs for 1 min, then flip and cook until set. Remove and chop into ribbons. Add the sugar and curry paste to the wok and fry for a minute, then tip in the rice and stir well to coat. Add the peas and spring onions, fry for 2 mins, then stir in the soy sauce.
  • Gently toss the omelette ribbons through the fried rice, then stir in the mackerel pieces. Divide between 4 bowls, dress with chopped cucumber and serve with more soy sauce.
