Italian Sausage and Cannellini Bean Braise

  • 1 tbsp olive oil
  • 1 chopped onion
  • 1 crushed garlic clove
  • 1 diced carrot
  • 1 diced celery stalk
  • Small bunch of chopped parsley
  • 300g Italian-style sausages
  • 125ml red wine
  • 400g tin of chopped tomatoes
  • 2 x 400g tins of cannellini beans, drained
  • Heat the oil in a saucepan and cook the onion, celery, carrot and parsley for 10 mins or so. Squeeze the sausage meat from their skins into the pan, and fry the meat until coloured all over.
  • Add the wine, beans, tomatoes and 250ml water. Bring the mixture to the boil, then simmer - covered - for about 30 mins. Season to taste and serve with crusty bread.
