Lamb and Cherry Meatballs

Ingredients

Method

  • 400g minced lamb
  • 1 grated onion
  • 3 cloves of garlic, crushed
  • 50g sour cherries, chopped
  • 100g pine nuts, lightly toasted and chopped
  • 1⁄2 tsp paprika
  • 1⁄4 tsp allspice
  • 1⁄2 tsp cumin
  • 1 lightly whisked egg white
  • Small bunch of parsley and mint, chopped
  • Salt and pepper
  • 2 tbsp veg oil for frying
  • In a bowl, mix together all of the ingredients - minus the oil - with a spoon, and season well. With wet hands, shape the mixture into the size and shape of golf balls.
  • Heat the oil in a large pan, and then lightly fry in batches for about 10 minutes, until golden all over and slightly crisp. Serve hot with salads and some crusty bread. Nice!
