Mackerel with Herb Couscous



  • 8 mackerel fillets
  • 3 tbsp olive oil
  • 200g couscous
  • 3 tbsp pine nuts, toasted
  • 3 tbsp raisins
  • 2 chopped spring onions
  • 3 tbsp chopped dill and parsley
  • 1 lemon, zest and juice
  • Rub the skin of the mackerel with oil, then grill for 10 mins until the skin is crisp. Meanwhile, cook the couscous according to pack instructions, fluff with a fork, and stir in the pine nuts, raisins, spring onions, herbs, lemon juice and a dash more oil. Divide between four plates, top each with two mackerel fillets, and scatter with more herbs and the lemon zest.
