Ingredients
Method
- 2 lemongrass stalks
- 20g root ginger
- 2 limes
- 100g sugar
- 600g chopped strawberries
- 1 chopped ripe mango
- Mint sprigs, chopped
- Add the lemongrass and ginger to a pestle and mortar and bash to slightly crush. Add the combo to a small saucepan, add the grated zest of 1 lime and squeeze in the juice from both limes. Stir in the sugar and 100ml water, and bring to a boil. Simmer until syrupy (about 8 mins), then set aside to cool completely.
- Add the mango and strawberry pieces to a large bowl. Strain the lemongrass dressing and add a couple of tbsp to the fruit, tossing together to coat each piece. Stir through the mint leaves and serve immediately.
