Ingredients
Method
- 1 chopped onion
- 500g pork mince
- 1.5 tsp mixed herbs
- 2 tbsp olive oil
- 3 crushed garlic cloves
- 400g tin of red kidney beans, drained
- 250g cooked wholegrain rice
- 2 tbsp chilli bean paste
- 1 green capsicum, diced
- Mix half the onion with the mince, dried herbs and some salt and pepper, then form into 16 meatballs and set aside. Meanwhile, fry the remaining onion in 1 tbsp of oil for 5 mins, then stir in the garlic, chilli paste, cooked rice and 1 tbsp of water to heat through.
- Heat the remaining oil in a separate pan and fry the meatballs for 10 mins, or until browned all over and cooked through. Spoon the rice and meatballs onto plates, then fry the capsicum in the pan juices for 2 mins, then add on top to serve.
