Moroccan Carrot Salad

Ingredients

  • A handful of raisins
  • 1 orange, zest and juice
  • 500g peeled carrots
  • ½ tsp each ground cumin and coriander
  • 2 pinches of ground cinnamon
  • 2 tsp white wine vinegar
  • Chopped mint leaves
  • Squeeze of lemon
  • Salt and pepper
  • Soak the raisins in the orange juice for 15 mins. Grate the carrots and place in a salad bowl with the orange zest, plumped raisins and the orange juice. Stir through the vinegar and spices, then stir in the mint leaves and seasoning. Perfect as a side for grilled meats or a tagine!
