  • 4 tbsp olive oil
  • 3 chopped garlic cloves
  • 1.2kg mixed mushrooms, chopped
  • 3 tbsp chopped parsley
  • 1 small chilli, chopped
  • 8 rectangles ready-made filo pastry (approx 20cm x 20cm)
  • Small bunch of chives
  • Preheat the oven to 220C. Heat the oil in a pan, and fry the garlic and mushrooms for 4 mins, or until just cooked. Season well, sprinkle with parsley, and set aside to cool.
  • Brush a sheet of filo pastry with a little olive oil, then place another sheet of filo on top to create two layers. Spoon a quarter of your mushroom mixture into the centre of the pastry, then gather up the corners to make a parcel. Secure with a couple of chives, brush again with olive oil, and repeat with the others. Bake for 10-12 mins, or until cooked through and golden.
