New Potato and Crab Salad

Ingredients

  • 500g baby new potatoes
  • 1 cucumber, sliced
  • 1 chopped shallot
  • 1 chopped red chilli
  • 1 lemon, zest and juice
  • 1.5 tsp sea salt
  • 10g chopped tarragon
  • 4 tbsp olive oil
  • 200g white and brown mixed crab meat
  • 40g rocket leaves
  • Boil the potatoes in salted water until just tender, then drain well and slice into 2cm slices. Add the sliced cucumbers to a mixing bowl with the shallot, chilli, lemon juice and some sea salt, then toss together and set aside to marinate together.
  • Tip the sliced potatoes into the cucumber bowl along with the chopped tarragon, lemon zest and the oil. Add half the crab meat and half the rocket, then season and toss together. Divide between plates and top with the remaining crab, rocket and some more tarragon to serve.
