Pear, Ham, and Ricotta Salad



  • 100g couscous
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 80g baby spinach leaves
  • 1 tsp honey
  • 60g peppery salad leaves
  • 2 pears, quartered and finely sliced
  • 50g ricotta
  • ½ bunch of chives, chopped
  • 1 lemon, zest only
  • 4 slices of quality ham, shredded
  • Tip the couscous into a bowl and add 150ml of boiling water, then cover and leave for 4 mins. Meanwhile, whisk together the oil, vinegar, mustard and honey in a small bowl and set aside. Fluff the couscous and tip into a salad bowl with the leaves, spinach and pears, and toss together with the dressing.
  • Combine the ricotta with 2 tbsp of water, the chives, and the lemon zest. Top the salad with this mixture, then scatter with ham and a good grind of black pepper.
