Plaice with Tamarind and Coconut

Ingredients

  • 1 lime, juice only
  • 1 crushed garlic clove
  • 4 plaice fillets, skin removed
  • Oil
  • 2 chopped shallots
  • 2 tsp paprika
  • 2 tsp tamarind paste
  • 200ml coconut milk
  • Flour for dusting
  • Handful of chopped coriander
  • Mix the lime juice and garlic with some seasoning in a shallow dish. Add the plaice fillets, turn to coat, then leave to marinate for 10 mins. Heat a little oil in a frying pan and fry the shallots until tender. Add the paprika, tamarind and coconut milk, then simmer and cook gently for 10 mins.
  • Dust the fish fillets with flour, then fry in a little oil for 2 mins on each side. Transfer the fish fillets to the coconut sauce, heat through and scatter with coriander. Serve with jasmine rice and pickles. Nice!
