Ingredients
Method
- 1 tbsp olive oil
- 2 pork steaks
- 250ml chicken stock
- 80g dried apricots, halved
- 400g tin of green lentils, drained
- 2 tsp wholegrain mustard
- 2 thyme sprigs
- 1 tbsp thyme leaves
- Heat the oil in a frying pan and cook the steaks for 5 mins, turning once. Add the remaining ingredients (except the thyme leaves), cover with the lid and simmer for 15 mins, stirring occasionally.
- Remove the thyme sprigs from the pan and discard. Season the meat, sprinkle with thyme leaves and serve with steamed green beans.
