Ingredients
Method
- 300ml fish stock
- 150g orzo
- Splash of olive oil
- 1 crushed garlic clove
- ½ chopped red chilli
- 200g raw peeled prawns
- ½ lemon, zest and juice only
- ½ avocado, cubed
- Handful of rocket leaves
- Simmer the orzo in the stock for 6-8 mins or until just tender. Drain and leave to cool. Add a splash of oil to a frying pan and fry the garlic and chilli for a minute or two, then add the prawns and lemon zest and fry for 2 mins more. Once the prawns are pink, stir in the lemon juice and a good grind of black pepper.
- Toss the warm orzo with the prawns, and gently fold through the cubed avocado. Divide between plates and top with some rocket leaves to serve.
