Quick Moroccan Mackerel Salad

  • 350g mackerel fillets
  • 2 tsp harissa paste
  • 300g giant couscous
  • 1 preserved lemon, chopped
  • 1 sliced spring onion
  • Chopped coriander
  • Rub the fish fillets all over with half the harissa, then grill for 4 mins on each side or until thoroughly cooked.
  • Meanwhile, cook the giant couscous according to packet instructions. Once plump and fluffed with a fork, mix with the preserved lemon, spring onion and remaining harissa. Flake the fish fillets, scatter over the top, finish with chopped coriander and serve as a starter or side.
