Ingredients
Method
- 1kg whole roasted chicken
- ½ red cabbage, finely sliced
- 3 grated carrots
- 5 spring onions, sliced
- 2 red chillies, sliced
- Handful of chopped coriander
- 2 tbsp salted peanuts, crushed
- For the Dressing
- 3.5 tbsp hoisin sauce
- 1.5 tbsp toasted sesame oil
- Mix the dressing ingredients in a bowl and set aside. Pick all the meat from the chicken and shred between two forks. Add to a bowl with the carrots, cabbage, spring onions, chillies and about half the coriander, then toss everything together with the dressing and heap onto a serving plate. Scatter with the remaining coriander and the crushed peanuts, and serve with flatbreads. Nice!
