  • 1kg whole roasted chicken
  • ½ red cabbage, finely sliced
  • 3 grated carrots
  • 5 spring onions, sliced
  • 2 red chillies, sliced
  • Handful of chopped coriander
  • 2 tbsp salted peanuts, crushed
  • For the Dressing
  • 3.5 tbsp hoisin sauce
  • 1.5 tbsp toasted sesame oil
  • Mix the dressing ingredients in a bowl and set aside. Pick all the meat from the chicken and shred between two forks. Add to a bowl with the carrots, cabbage, spring onions, chillies and about half the coriander, then toss everything together with the dressing and heap onto a serving plate. Scatter with the remaining coriander and the crushed peanuts, and serve with flatbreads. Nice!
