Roast Salmon with Orange Slices

  • 1 sliced onion
  • 2 oranges, zested and cut into slices
  • 2 tbsp olive oil
  • 1 crushed garlic clove
  • 1kg side of salmon, skin on
  • 2 tbsp honey
  • Bunch of parsley, chopped
  • Preheat the oven to 200C. Place the onion in a roasting tin, and add the orange zest and slices (plus any juices) to the onion with the garlic, 1 tbsp of olive oil and plenty of seasoning. Mix together, then place the side of salmon on top, skin-side down. Spread the salmon with a mixture of the honey and remaining oil, then roast for 25 mins, basting after 15 mins and again 5 mins later.
  • Lift the salmon from the tray and place, skin-side up, on a board. Peel away the skin and discard, then arrange some of the onions and oranges from the tray on top of the salmon. Drizzle with the roasting juices, then sprinkle with parsley and black pepper to serve - hot or cold, both are delicious!
