Salata di Cialledda



  • 250g stale ciabatta
  • 1 red onion, sliced
  • 500g ripe tomatoes
  • 1 crushed garlic clove
  • 1⁄2 tsp oregano
  • 2 tbsp olive oil
  • Handful of pitted olives
  • Small bunch of basil leaves
  • Salt and pepper
  • Tear the bread into chunks and sprinkle with a little water. Sprinkle the onions with a pinch of salt, and pop into a bowl of cold water for half an hour. Drain, and set aside.
  • Chop the tomatoes and chuck into a bowl, then mix in the garlic, oregano and some seasoning. Drizzle with oil, then add the onions, olives, basil leaves and bread. Leave to stand for 30 mins, then toss and serve.
