Salmon and Citrus Salad

  • 250g new potatoes
  • 150g French beans, sliced
  • 2 salmon fillets
  • 100g salad leaves
  • 4 small tangerines or similar, 1 juiced, 3 sliced
  • Chopped basil and coriander
  • For the Dressing
  • 2 tsp sesame oil
  • 2 tsp tamari
  • ½ lemon, juice only
  • 1 chopped red chilli
  • 2 tbsp chopped spring onion
  • Steam the beans and potatoes for 8 mins, then arrange the salmon fillets on top of the vegetables and steam for another 8 mins or until cooked through and flaking.
  • Mix the ingredients for the dressing together with the tangerine juice. Divide the salad leaves between 2 plates, top with the warm bean and potato mixture and the tangerine slices. Place the salmon fillets on top, then scatter with the herbs and drizzle with the dressing.
