Salmon Thai Salad with Noodles

  • 2 salmon fillets, skin removed
  • 1 orange, half zested and juiced, the rest peeled and chopped
  • 125g trimmed green beans
  • 50g mangetout, shredded
  • 75g peas
  • 1 tsp Thai fish sauce
  • 75g rice noodles
  • 2 tsp red curry paste
  • 3 chopped spring onions
  • Small handful of coriander, chopped
  • Scatter a little of the orange zest on the salmon, season, and steam for 5 mins. Meanwhile, boil the green beans, mangetout and peas for 5 mins, or until tender. Drain the veg, and cook the noodles in the same water.
  • Pop the curry paste and fish sauce in a salad bowl with the orange juice, some of the zest, and the spring onions. Add the drained noodles to the bowl and toss well, then add the chopped orange with the coriander and the cooked veggies. Toss together, and serve topped with the steamed salmon fillets.
