Sausage, Potato, and Sage Patties

  • 200g mashed potato
  • 500g quality sausagemeat
  • 1 tbsp plain flour
  • Salt and pepper
  • 8 fresh sage leaves
  • 2 tbsp olive oil
  • Mix together the mashed potato, meat, and flour in a bowl. Add plenty of salt and pepper, and mix until well combined. With your hands, form 8 round patties, and press a sage leaf into the surface of each one.
  • Heat the oil in a frying pan, and fry the patties for 5 minutes on each side, or until golden, crisp, and cooked right through. Serve straight away with sides of your choice (this goes great with baked beans!).
