Smashed Baby Potatoes with Chorizo

  • 600g baby potatoes
  • 140g diced chorizo
  • 1 tbsp olive oil
  • 6 sliced shallots
  • 30g chopped parsley
  • Preheat the oven to 220C. Mix the potatoes with olive oil and plenty of seasoning, and roast for 50 mins until golden and tender. Meanwhile, fry the chorizo and shallots until caramelised. Remove the potatoes from the oven and squash with the back of a spoon. Pile into a serving dish with the shallot and chorizo mix, and toss to combine. Scatter with parsley and serve as a side.
