Ingredients
Method
- 1 tbsp olive oil
- 1 red onion, chopped
- 4 garlic cloves, chopped
- 400g tin of butter beans, drained
- 200g passata
- 85g orzo
- 700ml veg stock
- 1 heaped tsp smoked paprika
- 100g kale, shredded
- 4 tbsp red pesto
- Salt and pepper
- Fry the onion in a large pan for 5 minutes, then add the garlic and fry for 2 minutes more. Add the beans, passata, stock, paprika, and orzo, and simmer for 10 minutes, or until the orzo is al dente.
- Chuck in the kale along with some salt and pepper, and simmer for a couple of minutes to wilt. Taste, season accordingly, and serve in bowls with a big dollop of pesto.
