Ingredients
Method
- 1 tbsp olive oil
- ½ sliced red onion
- 1 red capsicum, sliced
- 70g chopped chorizo
- 1 crushed garlic clove
- 1 tbsp chipotle paste
- ½ tsp each of ground cumin and coriander
- 100g raw king prawns, chopped
- Juice of 1 lime
- 2 large tortillas
- Guacamole, to serve
- Heat the oil in a frying pan, and cook the onion and capsicum for 10 mins. Chuck in the chorizo, fry for 5 mins more, then stir in the chipotle paste, spices, garlic, and prawns, and fry for another 2 mins. Season well, and squeeze in the lime juice.
- Spread the cooked mixture all over 1 tortilla, and top with the second one. Heat a dry pan over a high heat, and add the quesadilla for 1-2 mins on each side. Cut into 4, and serve with freshly made guacamole and iceberg lettuce.
