Ingredients
Method
- 1 tbsp oil
- 1kg beef short ribs
- 400g halved shallots
- 3 crushed garlic cloves
- 30g grated ginger
- 2 star anise
- 3 tbsp soy sauce
- 500ml beef stock
- 1 lime, juice only
- Heat the oil in a large casserole and brown the seasoned ribs all over in batches. Remove from the pan and set aside. Add the shallots to the pan and cook for 5 mins, then tip in the ginger and garlic and cook for 2 mins more. Add the soy, star anise and stock, then return the ribs to the pan.
- Cover and simmer for 3 hours, or until the meat is very tender. Shred the meat between 2 forks and discard any bones, then simmer (uncovered this time) for 45 mins to thicken the sauce. Add lime juice to taste, then serve with mashed potato - perfect!
