Sweet Potato Rosti

Ingredients

Method

  • 1 red onion, finely chopped
  • 1 red capsicum, finely chopped
  • 2 garlic cloves, finely chopped
  • 3cm piece of ginger, grated
  • 1.5 tbsp cornflour
  • 1 large sweet potato, peeled
  • 125g flour
  • 2 tsp oil for frying
  • Salt and pepper
  • Put the onion, capsicum, garlic, and ginger in a bowl. Add the cornflour, and season well. Grate the sweet potato onto a kitchen towel, then squeeze out the excess liquid. Mix the grated potato into the other ingredients in the bowl, then sift in the flour and mix thoroughly. Leave to rest for 5 minutes, then roll into a ball.
  • Divide the mixture into 8-10 balls, and flatten to make patties. Fry in oil for 5-6 minutes on each side, or until golden and crisp. Drain on kitchen paper, and serve as a delicious side.
