Thai Noodles with Broccoli

Ingredients

  • 200g flat rice noodles
  • 2 tbsp Thai fish sauce
  • 2 tbsp tamarind paste
  • 1 tbsp brown sugar
  • 2 tbsp oil
  • 1 broccoli, cut into florets, stem chopped
  • 3 chopped spring onions
  • 3 chopped garlic cloves
  • 2 red chillies, chopped
  • Handful of chopped roasted peanuts
  • Chopped coriander
  • Lime wedges, to serve
  • Cook the noodles according to packet instructions, then drain and rinse. Mix the fish sauce, sugar and tamarind paste with 2 tbsp hot water in a bowl, and stir to combine.
  • Stir-fry the broccoli in the oil for 5 mins or until charred. Add 50ml water, cook until evaporated, then reduce the heat and stir in the spring onions, garlic, chilli and some seasoning. Add the sauce and the noodles to the mixture, and toss together. Serve on plates with a good scattering of peanuts and coriander, and with some lime wedges for squeezing.
