Turkey Mince Meatballs in Fennel and Tomato Sauce

  • 400g turkey breast mince
  • 25g white breadcrumbs
  • 2 crushed garlic cloves
  • 2 tbsp olive oil
  • 1 chopped onion
  • 1 diced carrot
  • 1 tsp fennel seeds
  • 400g tin of chopped tomatoes with herbs
  • 1 tbsp tomato puree
  • Cooked wholewheat spaghetti, to serve
  • Mix the mince with the breadcrumbs and half the garlic. Season well, then shape the mixture into 12 balls. Chill for 10 mins. Meanwhile, fry the onion, garlic and remaining garlic in 1 tbsp of oil for 5 mins to soften, then stir in the fennel seeds and cook for 1 minute more. Tip in the tomatoes, stir in half a can of water, then mix in the tomato puree. Season and simmer for 15 mins, then whizz with a hand blender until smooth.
  • Heat the remaining oil in a clean frying pan, and fry the meatballs for 10 mins or until browned and cooked through. Transfer to the sauce, simmer until very hot, then serve with wholewheat spaghetti.
